I'm slowly starting to get wanderlust, especially for my second home and my Indian family. To bring some Indian flair into my everyday life and because I love Indian cuisine so much, I practice my favorite Indian dishes every week. Cooking is perfect for clearing my head, I pamper myself and earn a few brownie points with my mother-in-law!
I've loved "Baingan Ka Bharta" since I was a child. A curry made from smoky eggplant. Traditionally, the eggplant is roasted over a gas flame. If, like me, you don't have a gas stove, you can also roast the eggplant in the oven or on the grill. It's very important that it burns a little to give it that smoky flavor. So don't worry if the eggplants suddenly look black and charred. Have fun cooking!
Ingredients

- 1 tbsp oil - 1 tbsp ghee or clarified butter - ¼ tsp turmeric - ½ tsp coriander powder - ½ tsp garam masala - ¼ tsp chili powder |
- 2 cloves of garlic - 1 cm piece of ginger - 2 eggplants - 4 tomatoes - 2 red onions - Fresh cilantro |
Preparation
- Halve the eggplants and roast them in the oven at 220° on aluminum foil, high up, for approx. 30 minutes until the skin is shriveled and slightly charred black.
- Finely dice garlic and ginger, dice onions, cut tomatoes into approx. 1cm cubes.
- Heat oil and ghee in a pot. Add onions and cook until golden.
- Add spices and stir for 30 seconds. Add garlic and ginger and sauté for another 30 seconds.
- Add tomatoes and cook for approx. 15 – 20 minutes until the tomatoes are cooked down to a puree and the oil separates slightly.
- Remove eggplants from the oven and let cool briefly. Scoop the soft flesh out of the skin with a spoon and cut into smaller pieces with a knife.
- Add the eggplant flesh to the tomato spice mixture and cook for another 5 minutes, combining well.
- Garnish with fresh cilantro and serve.
